Experiment 2 determined the effects of pH of soaking water
on GABA production in two rice cultivars. There were three pH
treatments (pH 5.6, 7.0 and 8.4). The pH value was adjusted by
citric acid and sodium citrate. The seeds of brown rice were
soaked at 30 °C for 24 h and germinated at 35 °C for 48 h. Sample
processing was identical to experiment 1.
