Generally for each temperature, folate degradation kinetics
were comparable in spinach and green beans. For all temperatures,
a plateau was reached for both vegetables. The kinetics neither followed
a first order nor a second order reaction, and a first order
reaction with a partial conversion was still not satisfying, for the
three temperatures and the two matrixes studied. This is in contradiction
other studies where authors observed total folate degradation
following a first order reaction
