200 grams ground pork
2 tablespoons My Choice red curry paste
2 teaspoons turmeric powder
2 teaspoons shrimp paste
1 teaspoon ground roasted coriander seeds
1 tablespoon chopped garlic
2 teaspoons kaffir lime leaves, thinly sliced
2 tablespoons vegetable oil
1 teaspoon fish sauce
1 tablespoon sugar
2 tablespoons red finger chillies, thinly sliced
2 pieces Onsen eggs
2 cups steamed rice
fresh coriander leaves, for dressing
Directions
1. Mix red curry paste, turmeric powder, shrimp paste and coriander seeds together.
2. Heat oil in a frying pan on medium heat. Add garlic, stir until fragrant. Add red curry paste, stir until fragrant.
3. Add ground pork, stir until mix well. Season to taste with fish sauce and sugar and add kaffir lime leaves and red finger chillies.
4. Serve over rice. Crack eggs in the middle. Dress with coriander leaves and red finger chillies.
