It can be concluded that
the effect of microwave heating on the macroscopic properties of
starch granules was mainly attributable to the rapid heating rate
rather than to the molecular vibration mechanism. The results of
the CV experiments showed that the heating rate directly affects the
strength of the hydrogen bonds in amylopectin with respect to their
molecular and submicroscopic lamellar structure
