To cook this dish you need a lot of patience and time. To cook the oxtail takes about three to four hours in an oven. You need to use a lot of beef stock and not reduce it down to far because you don’t want to intensify the flavors too much. It’s also very important to add the miso past at the very last moment otherwise it will become salty. I serve it with root vegetable purees like carrot and celeriac, also a nice fresh green vegetable like bok choi to refresh your pallet as you’re eating.
