2.4. Gel strength
Labneh samples were cooled in a refrigerator at 4–6 ◦ C. The gel strength of labneh samples was determined by penetration measure- ments(Lloyd LF Plus Nexygen 4.1; Ametek Precision Instruments, Germany). The instrument was adjusted to the following conditions: cylindrical probe (11.11 mm diameter), penetration speed, 30 mm/s; penetration distance, 35 mm into surface.
