Total phenol amount was higher in the 'Monalisa' cultivar at 5 and 15ºC (Figure 4). A small increase in the phenol amount after the first day of storage was also observed in all the treatments. 'Agata' and 'Asterix' potatoes did not significantly differ between them at both the storage temperatures. At 15ºC, a slight increase in total phenol amount was observed in all the cultivars. The 'Monalisa' cultivar showed two times higher phenols that the 'Agata' and 'Asterix' cultivars (Figure 4B).
