However, one prevalent problem in spray drying
is the stickiness that occurs when sugar-rich
foods such as fruit juices, sweet toddy and honey
are spray-dried. The stickiness results in
depositions onto the internal dryer wall and
unacceptable clumping of particles. Both of these
lead to inferior product quality and economic loss
(Bhandari and Howes, 1999; Ozmen and Langrish,
2003).
