During the extraction process, Erlenmeyer
flasks were covered with a plastic wrap in order to prevent the
evaporation of solvent. After extraction for a selected time, the
mixture was centrifuged at 6500 rpm for 15 min (Remi R-24
Centrifuge, India) and supernatant liquid were collected for
the determination of pigments and colors from jamun fruits.
Experiments were performed randomized in order to minimize
the effects of unexplained variability in the observed
responses due to extraneous factors. All experiments were
done in triplicates and the average values were recorded and
are shown in Table 1.
