These changes may have resulted from oxidation of the lycopene by the dissolved oxygen in the juice, since this is the pigment responsible for the red color, and it is more dispersed in the processed samples. Thus, as observed in the optical microscopy images (Fig. 3 and Fig. 10), HPH increases the exposure of the lycopene, and this larger area makes it more susceptibility to oxidation. In fact, this is representative of the time of storage, even for a small amount of residual oxygen dissolved in the sample as can be observed in Fig. 11. Once again the results obtained are in agreement with the previous ones.
