4. Conclusions
TfMA could be directly used in cooking condition to produce low
retrograded rice starch ormeal. The mechanism of its anti-retrogradation
for starch lied in the selective degradation of amylose and increasing the
ratio of short-to-long chain of amylopectin. This retrogradation-reducing
process by TfMA for rice meal was timesaving and did not cause microbial
contamination, which demonstrated great potential industrial applications
for the improvement in sensory quality of precooked rice meal
