2.2. Preparation of analytical samples and gravimetric determinations
Aliquots (7 plums, 100 grapes and 5 apricots, respectively) were cut into quarters or halves, pooled, weighed and immersed in liquid nitrogen for freezing (in triplicates for all analyses). For specific quantifications, separate aliquots were peeled and the flesh and skin were separately immersed in liquid nitrogen. Stones were weighted. Fruit pieces were ground under liquid nitrogen using a PM-400 ball grinder (Retsch GmbH, Germany). Dry matter was estimated as the residual weight after freeze-drying (three replicates). The general characteristics of the fruits are reported in Table 1.
