The aim of this research was studied plants and grains that was in the local environments. They can growth in Thailand and abroad countries. This study of anthocyanin in Dioscorea alata Oryza sativa and Zea mays fraise by detecting to compare anthocyanin in differences samples by spectrophotometer, compare different extraction methods and difference time to extraction samples. Anthocyanin was useful in healthy foods, reducing the risk of chronic diseases examples such as cancer, diabetes. Anthocyanin can delay the degeneration of cells. This study was the guideline to consumers that how to eating foods with health benefits.
