The free sugars and fatty acids (both free and bound) of different parts of jackfruit (Artocarpus heterophyllus) were isolated. The sugars and fatty acids were identified and quantified by gas-liquid chromatography as their trimethylsilyl derivatives and methyl esters, respectively. Fructose, glucose and sucrose were found to be the major sugars in all parts of jackfruit, except in the bark, which is devoid of glucose. Capric, myristic, lauric, palmitic, oleic, stearic, linoleic and arachidic acids were found as major fatty acids with varying proportions in different parts of jackfruit
