TP and phenolic acids were positively correlated (r = 0.74,
p = 0.0004) (data not shown). This result was somewhat expected
as the phenolic acids together with other phenolic compounds
are measured in the FC assay. It should be noted that FC is a
non-specific method, as the reagent does not only react with phenolic
compounds, but also with other reducing substances such as
ascorbic acid and Fe2+. The FC-method is therefore a measure of the
total reducing capacity (Gülçin, 2012).
