On the 8th day of storage, no significant differences were
recorded for smell, visual appearance, texture and general acceptability
when the control was compared with OEO or CITRAL. Only
differences between oregano essential oil and citral were found by
the judges. The samples with CITRAL were clearly preferred on day
8 of storage.
OEO and CITRAL resulted in a pleasant flavour, compatible with
final products. This is a prerequisite for the use of essential oils in
foods for antimicrobial purposes.
