3.3.1 meat preference
Results of the preferences for the odor and flavor of boar patties compared with patties from castrated males showed a significant interaction between the type of boar used in the pairwise comparisons and the country of assessment (Fig 2) as well as between the type of boar used in the pairwise comparisons and the sensitivity of the consumers to skatole ( Fig 3). Furthermorel the androstenone sensitivity of the consumers influenced the preference of boar over castrated patties independently of the levels of “AND” and “SKA” of the boar sample used in the pair comparison and the consumers sensitivity to skatole (Table 5).
