Drain noodles well. Heat oil in a large frying pan and fry the garlic, chillies and ginger for a minute. Add pork and fry until well browned. Add fish sauce lemon juice, sugar and pepper. Mix cornflour with a tablespoon of water, add and stir until thickened. Add prawns and mint, and transfer to a bowl to cool. Brush wrappers lightly with water, working with 6 to 8 at a time. Put a spoonful of the filling on a point of the roll and fold over, then turn the sides in to completely enclose. Continue to roll away until there is only a little section of the point left. Brush with cornflour mix and fold it over the roll, pressing down gently but firmly. Then can be left at this stage for 6 hours or frozen. To cook, heat oil to about 190ํC and fry the rolls, turning over until golden brown and crisp. Drain.
