Significant differences (at the 95% confidence level) among the samples inoculated with different yeast cultures were analysed by one-way analysis of variance (ANOVA) and Scheff SPSS® 19.0 software (SPSS Inc., Chicago, IL). Based on the OAVs, key volatiles were selected to perform the principal component analysis (PCA) by using software Matlab R2008a.
