Roudaut et al.(2002) showed a lack of agreement among
verbal definitions of crispness which might explain contradictory results
reported in literature.
First, dry cornflakes were evaluated: the panelists take a level spoonful
of products for scoring each attribute. In a second time, the assessors put a
spoonful of cornflakes in milk, mix for 8 s (the time to have a first mouthful
of flakes) and evaluate descriptors after draining the milk from the cereals.
The sensory profile ratings were subjected to a Canonical Variate
