2.2.3. Rate of Acidification during Nunu Fermentation with Starter Cultures. The pH of fermenting Nunu was determined
using a digital pH meter (Crison basic 20, Barcelona). The pH meter was calibrated using standard buffer solutions
and measurements were taken at ambient temperature of 30 ±2∘C. All measurements were carried out in triplicate and
means and standard deviations were determined.
