In this study, the three dominant OTUs in the LAB group
were Streptococcus (genus), Lactobacillus (genus), and Lactobacillales
(order), which belong to the phylum Firmicutes, class Bacilli,
and order Lactobacillales. There appeared to be consistent patterns
of succession in the communities in which Streptococcus peaked on
day 1 and then decreased, while the abundances of Lactobacillus
and Lactobacillales increased till the end of fermentation (day 8).
