2012). Among the best food dehydration techniques, freezedrying
is known to produce the highest quality dehydrated
products (Khalloufi and Ratti 2003; Muthukumaran et al.
2008; Orak et al. 2012), being more effective in preserving
valuable food compounds than traditional methods of drying.
