INGREDIENTS
4 hard-boiled egg yolks5 olive oil1 tsp garlic powder1 tsp English mustard2 white vinegar3 double creampinch saltpinch pepper
METHOD
Place the egg yolks in a large bowl and crush with a fork. Pour in the olive oil and whisk the yolks and oil together to form a paste. Add the garlic powder, salt, pepper, mustard, vinegar and mix together. Add the double cream gradually and mix together. Make sure you add the cream slowly or the vinegar will cause it to curdle. Once the cream is all combined, you can add a pinch of sugar or another sweetener to taste
