The 2,2-diphenyl-2-picrylhydrazyl (DPPH) free radical scavenging activity was analyzed according to the Blois’
method (17). Kimchi was extracted with ethanol solution
at a ratio of 1:10, and 100 μL of the extracted solution
was mixed with 2 mL of 1.5×104 M DPPH
solution. The mixture was left at room temperature for
30 minutes and then absorbance was measured at 520
nm using a spectrophotometer (V-570, Jasco Co.). The
control group was also measured in the same conditions,
and DPPH radical scavenging activity was calculated by
the equation below
