The physicochemical properties highlighted the good quality of the analyzed oils. The oxidative stability index was influenced by the composition of fatty acids. The pulp oil was more stable(45.97 h), due to the lower amount of poly-unsaturated fatty acids(12.23%), in other words, half the content of these fatty acids found in the seed oil (48.45%) and also by the relevant monounsaturated fatty acid content (46.09% oleic acid).
