2.5. Microbiological analysis
Milk samples were analyzed for mesophilic and psychrotrophic bacteria count every 3 d during 30 d of storage according to recommendations from the Standard Methods for the Examination of Dairy Products of the American Public Health Association (Wehr & Frank, 2004). Analysis of Salmonella and coliforms at 30 8C and 45 8C were carried out only on the first day of storage.
