From the densitometric analysis, it was found that at 530 nm, the peak areas of two bands (Rf 0.19 and 0.26) were much higher compared to other bands (Fig. 1).
Rf value of 0.19 indicated delphinidin-3-rutinoside whereas, Rf value of 0.26 indicated delphinidin-3-glucoside
Mean peak areas of these bands under different conditions of solvent and SC-CO2 extractions are shown in Table 1.
It is observed that at varying extraction pressures under isothermal conditions (60 C), the mean peak area of delphinidin-3-rutinoside was significantly higher than that of delphinidin-3-glucoside (p = 0.0224)
However at 80 C, the reverse was observed e the mean peak area of the latter was insignificantly higher (p = 0.3827) than that of the former. Therefore, it can be reasonably concluded that at 10e15 MPa, 60 C, the eggplant peel color extracts are rich in delphinidin-3-rutinoside.
