Bell peppers were hung from a metal bar with a cotton string fastened at the stem of each fruit. Except for MO coating, individual fruits were hand dipped for 15 sec in coating solutions. After dipping in a coating solution, a coated fruit was hang-dried at ambient conditions. A fan generating low speed air was used to hasten drying. When the coating dried, the cotton string was cut and the fruit was placed stem-end down on metal screens to remove the excessive coating solution that deposited at the stem scar.
