Rice or noodles? If you ask me which one I prefer I will hands down pick noodles. So much can be done with noodles and the variety available is quite staggering! Egg noodles, soba noodles, udon noodles, pasta, zoodles, somen noodles, shirataki noodles and one of my favorites; rice noodles. Why? Because they feel more delicate and light and are the perfect vehicle for south east Asian flavors (my favorite next to Japanese).
I’m using bihon noodles for this yummy Filipino pancit recipe – although vermicelli noodles are also acceptable.
