The OPs tested in this
trial were obtained by a three-phase olive oil extraction from various
Italian olive cultivars using stoned olives after oil separation and were
characterized by different phenolic contents. Coratina is known to be
the richest olive cultivar in terms of polyphenols, and this may explain
the abundance of these compounds in the derivation of OP
with respect to Frantoio, which is obtained under the same industrial
conditions
