The presence of crude extract (125 AU/sausage) in Vienna sausage which was inoculated with Listeria showed significant (P < 0.05) inhibitory effect ( Fig. 6). After 12 or 24 h incubation, the crude extract group achieved 2-log reduction compared to control group.
