The oxidative stability was studied by means of an accelerated
storage, which is commonly used to obtain reliable information on
product stability. Emulsion samples (50 ml) were placed in capped
glass bottles, covered with Parafilm, and allowed to oxidize in a
covered water bath at 37 C for 4 weeks. The primary and secondary
oxidation products were measured after 0, 7, 14, 21, and
28 days of storage.
