1. Introduction
Species adulteration of meat products has long been a global
issue, which not only relates to import and export, but also has an
impact at the retail level. In China, a number of severe events of
meat adulteration were revealed in 2011, primarily with poultry or
pork substituting beef or mutton. The illegal manufacturers have
made prodigious profits from the secretive chain of fraudulent
meat, and moreover, adulterations with pork were severely against
the religion beliefs of Muslims.
