Nisin is known to inhibit the growth of gram-positive
bacteria and its antilisterial effect has been widely reported in
various food products including milk,
frankfurters,cheese, pork , salmon and beef. SL (2–4%) has been
shown to retard bacterial growth in beef,pork,turkey and salmon.
Its antilisterial activity (2–3%) has also been demonstrated in meat with
minimal effects on the pH and sensory characteristics of the
