The initial number of molds on coated and uncoated peppers was within the range of 3.0–3.5 log CFU/g. After two days of storage, A. niger mold increased significantly (p < 0.05) by 0.5 log CFU/g, but during further storage the mold significantly decreased (p < 0.05) in all samples. After 21 days of storage, there was a significant difference (p < 0.05) between levels of A. niger for both coated and uncoated samples. Compared to uncoated samples, the reduction on peppers coated with pullulan and coated with pullulan + SH extract was 0.5and 0.9 log CFU/g, respectively.
