Non-enzymatic browning (NEB) index of extrudates was carried out as previously reported by Palombo, Gerter, and Saguy (1984). Sample (100 mg) was mixed with 1 mL of deionized water. An aliquot (200 mL) of the mixture was transferred to a test tube which contained 200 mL of protease solution (in Tris buffer). The test tubes were incubated for 2 h at 45 C, in a water bath (NSW-125, Narang Scientific Works, New Delhi, India). The test tubes were cooled and 300 mL trichloroacetic acid was added to each tube. Then tubes were centrifuged at 7000g for 20 min. The absorbance of super- natant was measured on a spectrophotometer. The browning index (DA) was calculated as follows:
