Deionized water was then added to make suspensions with a moisture content in the range of 40–80%. Pans were
immediately hermetically sealed and equilibrated for 3 h at room temperature before heating in the DSC.
Samples were heated from 25 to 110 1C at 10 1C/min.
The enthalpy (DH, expressed as J/g dry matter) of phase transition was measured from the endotherm of DSC curves using STARe software (Mettler-Toledo) based on the mass of dry solid (dry matter or starch).
The integration of the endothermic peaks was performed at the same temperature range for dry matter and corresponding starch.
Peak endotherm temperatures (Tp) were also measured from thermograms.
Starch content was determined using the ratio of DH of cherimoya dry matter to DH of isolated starch 100 and is
expressed as mg starch/g fresh tissue.
All results are the means of at least three measurements and are expressed as means7SE.
