None of the coatings substantially influenced color changes during storage. Hue, as represented by average hue angle (tan21
b/a), of all bell pepper fruits remained in the range 1207 to 1307 (data not shown). A hue angle of 07 represents pure redness, while a hue angle of 1807 represents pure greenness. Similarly, visual evaluation results showed no color changes for all coated peppers compared to controls. They were all scored at 1, which represented green color (data not shown).
