Escherichia coli K12 has well-defined characteristics, is
nonpathogenic, and has been used extensively and could
possibly serve as a surrogate for S. enteritidis. The objective
of this study was to determine the thermal resistance of
E. coli K12 and S. enteritidis strain 13076 in liquid egg
white and liquid whole egg using a new type of aluminium
TDT disk and to evaluate the suitability of E. coli K12 as a
surrogate for S. enteritidis for liquid egg pasteurization.
This study did not attempt to compare different TDT
devices currently used by other researchers with the new
type of aluminium TDT disk in thermal inactivation of
Salmonella.
