The SAJ is an old and prominent tradition in the villages of Lebanon, it is a curved metallic sheet on which the Lebanese bread, we call Markouk, is heated and cooked. The bread is almost as thin as a sheet of paper. The word “Markouk” literally means "thinned", it is also the lightest of breads.
