The dynamics of volatile compound production was followed by sensorial evaluation (olfactometry) with a four member non-trained panel and by gas chromatog- raphy (GC). The compounds in the headspace of the cultures were identified by comparing their retention time with those of standards. GC analysis was per- formed with a Hewlett-Packard 6890 apparatus equipped with a flame ionization detector and a 30 m Megabore HP-5 column.
