Grilled prawns tom yum soup
Ingredient ( 1 portion)
1. Medium fresh prawn 360 gr.
2. Sliced lemongrass 30 gr.
3. Sliced galangal 5-6 slices
4. Chopped kaffir lime leaf 1½ tbsp.
5. Julienned kaffir lime leaf ½ tsp.
6. Roasted chili paste 2 tbsp.
7. Butter 1 tbsp.
8. Fish sauce 1 tbsp.
9. Chopped bird's eye chili 1 tbsp.
10. Salt 1 tsp.
11. Pepper powder ½ tsp.
12. Straw mushrooms 4 gr.
13. Lime juice 1¼ tbsp.
14. Sliced cilantro 1 tsp.
15. Stock 1½ cup
16. Sugar ¼ tsp.
17. Milk ¼ cup
Preparation
1. Cut prawn to haft and heat butter in pan grilled and grilled prawns with sliced lemongrass, sliced galangal and chopped kaffir lime leafs and season by pepper and salt, cook until prawns is orange brown.
2. Stir fried sliced lemongrass, roasted chili paste and sliced galangal to fragrance and pour in pot and add stock and simmer about 5 minutes and season by lime juice, fish sauce, chopped bird's eye chili and little sugar.
3. Filter soup and pour milk, add straw mushroom and simmer about 5-6 minutes.
4. Pour tom yum soup in plate soup and put grilled prawns on the top and decoration by julienned kaffir lime leaf and sliced cilantro and serve.
