TBA values of both (fresh) muscles were significantly lower for the SUP group at day 12 and similar at day 0
(day of portioning) of the storage period, as compared with the values for the CON group (Table 2). Thus, in
spite of the lower contrast in vit. E content between SUP and CON muscles in our experiment, vit. E supplementation inhibited lipid oxidation during 12 days of storage. Yet, TBA-values of CON samples at the end of
the storage period were considerably lower than the values reported for 14 days aged control samples by
Liu, Scheller, Arp, Schaefer and Williams (1996b), which might indicate that lipid oxidation was relatively
low in the CON samples.
