Overall sensory acceptability for the external quality of all chitosan- coated eggs also was not different from the control and commercial eggs. Caner (2005) also found that the shelf life of eggs coated with chitosan (3% in 1% acetic acid) could be extended by at least 2 wk longer compared with that of control at 25 ◦C, and that overall sen- sory acceptability for the external quality of chitosan-coated eggs was not different from the control eggs.
