Pure stevia extract powder (Stevioside 80%),
which is 100e150 times sweeter than table top cane sugar was
obtained from Herbo Veda India, Uttar Pradesh, India. Preliminary
cake baking trails with 0.5, 0.75 and 1.0% stevioside along with
100% SO were carried out. These cake samples were evaluated for
sweetness in comparison with the control cake with sugar. The
results showed that the sweetness of the cakes with 0.75% was
comparable to control cake with sugar
