Shelf-life study
Shelf-life studies of cookies were also carried out
by packing them in polyethylene pouches (100 g),
stored in air tight containers at ambient temperature
and analyzed at an interval of 1 month for stability
studies by determination of peroxide value and acid
value up to 2 months. Peroxide value and acid value
was determined by following the methods of IS:548
(Part 1, 2010).
