In this context, it is important to remember that atocopherol
concentration is greatly affected by the storage
conditions of the oil including temperature and light exposure
[23]. Studies have also shown that a-tocopherol has a
synergetic effect in association with some phenolic compounds
having significant antioxidant activity [24,25] (Fig.
3). Although the fatty acid composition of coconut oil is
well established, relatively little is known about the minor
constituents and their biological effects [26]. Experiments
have also shown that the diet based on GNO is atherogenic
[27,28] (Fig. 4).
