Vegetable samples collected from farms and urban markets in Zanzibars showed higher concentrations of Zn, Fe, Cr and Mn in amaranth while in cabbage, Cd, Ni and Pb were on higher side. Although the mean concentrations of the essential elements were in the range reported in the literature, Pb and Cd were in concentrations above FAO/WHO tolerable limits (Mohammed and Khamis 2012).
