Soyasaponins are a group of complex and structural diverse
oleanane triterpenoids found in soy (Glycine max) and other
legumes [1]. They are composed of a neutral, non-polar oleane-
12-ene triterpene aglycone to which various sugar residues are
linked at one or more glycosylation sites [2]. In recent years, some
important biological properties of soyasaponins, including hyperlipidemia
prevention [3], anticancer [4], immunoregulation [5],
antioxidation [6], antimutagenicity [7] and HIV infection inhibition
[8], have been widely studied.
